There was a time when we could acquire certain fruits and vegetables only in certain seasons. Advances in preservation, refrigeration and transport have made it possible to buy the most exotic food product whenever we want it, no matter the time of year. However, the availability of these products comes with an environmental cost for they require specialized transport and energy to bring to our table. Buying in season also improves the sustainability of our local farm community, increasing food security which can be threatened as we have witnessed during the current pandemic.
